QUICK Skin-Loving Raw Salad

- helps improve blood circulation, boost metabolism, detoxify, produce collagen -

Ingredients

  • 2 cups baby spinach
  • 1 carrot
  • 1 beetroot
  • ½ a can of drained lentils
  • 1tbsp sauerkraut
  • 1/3 avocado
  • 1tbsp goji berries
  • Fresh herbs to taste (handful of parsley or coriander)

For the dressing:

  • 4 Sicilian olives and 2 TBSP of brine
  • 2 tablespoons of hemp seeds
  • Half Lebanese cucumber
  • 4 grape or cherry tomatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste

 Method

  1. Grate the carrot and beetroot and combine all salad ingredients in a large bowl
  2. Blend dressing ingredients in a food processor or nutribullet, & pour over salad
